My love of Leftovers

I think it is sad how much food the society as a whole wastes. I know many who refuse to eat leftovers because they are horrible the second time around, or they fell as if they are just above leftovers, or maybe just because they don't know how to re-create their leftovers so your family is not eating the exact same thing again for the second time in a row. In my household we eat leftovers weekly. Sometimes just as leftovers, but many times I try to re-create the leftovers into a whole new dish so that my family doesn't get "bored" with the meals.


Here are some easy suggestions for re-creating leftovers that I use often.






Left over Roast
Beef Stroganoff
Philly Cheese Steak Sandwiches
Chunky Chili
Stew
use in Stir-fry
kabobs

Left over Taco Meat
Loaded Baked potatoes
Ultimate nachos
Burritos/Enchiladas

Left over Rice
Fried Rice
Use it in Fajitas
use it for Stir-fry
Make rice pudding for dessert
make the German classic romagrate (a family favorite around here)

Left over Ham
Scalloped Potatoes & ham
Ham & cheese Quesadillas
Ham & pineapple pizza
Ham & pineapple kabobs
Ham & split pea soup
Chicken Cordon Bleu
Split pea & Ham soup

Leftover Kneophla soup
Fried Kneophla & Sauerkraut
Chicken & dumplings (use the Kneophla as the dumplings)

Left over Sausage
Sausage & dumplings
Biscuits & Gravy with Sausage
Sausage Penne Pasta

Left over Barbecued Ribs or Pork
Nachos with your barbecued ribs & coleslaw on top

Left over Chicken
Chicken noodle soup
Chicken Quesadillas
Chicken & Dumplings
Chicken Salad
Chicken Cordon Bleu

The possibilities are endless but remember to keep it new, fresh & interesting!
